Community Craftsmanship & Expert Curing

This lot represents the collective dedication of smallholder farmers across 16 communities and 35 villages, each tending plots averaging just two hectares. Because Andean weather brings unpredictable mountain rains, drying coffee evenly can be a race against the clock. To protect quality, farmers deliver their freshly harvested lots directly to Jesús Volveras, a trusted local collector and farmer based in town.

With dedicated facilities to dry cherries received at varying moisture levels (from 20% to 50%), Jesús ensures the coffee cures safely and evenly. From there, the lots head to Racafe’s dry mill in Popayán for rigorous cupping, grading, and quality control.
